Cata Cafe represents farmers in Colombia and helps initiate pre-financed direct trade. This year we selected 3 female growers. For this lot the whole cherries undergo a 12hr anaerobic fermentation, they are then depulped & fermented in water for 40hrs. Cultivating Pink Bourbon well has its challenges, but also its rewards, Nidia has won national awards for her work with the varietal. This is our 2nd Pink Bourbon from Cata & we continue to be impressed! Delicate & light bodied with great complexity of tropical & stone fruit!
